Ramen is the new sushi!

Your Captain has recently tried the Koto Ramen Borgo San Frediano in Florence, the new Koto Ramen boys’ club located in Borgo San Frediano 41R in the heart of the Oltrarno, the coolest district of the world according to the Lonely Planet!

Despite the high expectations inherited from the “brothers” of  Via Verdi in Florence and Via Valentini in Prato, the new restaurant not only does not disappoint but raises the bar even more in the name of quality and refinement!

The menu of Koto Ramen Florence Borgo San Frediano

Among the many noteworthy dishes tasted during the evening, I would like to point out the Kakuni Bun (further improved compared to the summer version of Molo 5 … a boil!), The marinated aubergines in sweet and sour sauce Katsuobushi (no is not a dirty word but thin slices of smoked dried tuna, a typical element of traditional Japanese cuisine) and obviously its majesty Ramen, the real protagonist in the menu tried in two variants present exclusively in the local San Frediano: the Ramen al Lampredotto, a curious and successful attempt to bring (in collaboration with the historic trippaio of Piazza De’ Nerli) the most typical dish of Florence in Japan, and the Tonkotsu Ramen, a pork broth cooked for more than 12 hours of which I immediately and hopelessly fell in love (I strongly advise you to add without fear the garlic sauce burned in accompany agnamento to give a further boost to the stock).

The desserts are excellent too, but I could not be more objective on those given that in the sixth glass of sakè I started to lose all criticism and find vaguely attractive even my diner and one of the hall extinguishers.
